fun with spinach

This is Kya’s favorite recipe, and the reason why she is a big hit at potlucks around here. When she shows up, everyone always gets a gleam in their eye and asks breathlessly, “Did you bring your spinach?” (Well, someone did once, anyway.) Anyway, basically it’s just spinach (frozen chopped spinach, thawed and drained, about three or four packages) mixed with cottage cheese (one container), chopped hard cheese (she likes to use a block of that mottled orange and white stuff that I think is colby jack) and a beaten egg or several.

Put it all in the crock pot! Let it cook for about five hours; one hour on high, then turn down to low for the rest of the time. Stir it once in a while if you’re around.

It’s done! I know it isn’t the most appetizing-looking thing you’ve ever seen–partially due to my pathetic photography skills–but believe me, it tastes good! I think it would be good with some rice cooked in it, to soak up the juices, but I have not been allowed to test my theory yet. I am restricted to serving it over basmati rice cooked separately.

I haven’t tested this, but I bet the leftovers would freeze really nicely. It’s also great reheated. We get at least four, sometimes six servings out of this recipe.
